Preparation of Vegetarian Pizza with Cheese:
- Mix the flour, a pinch of sugar, and 1/2 teaspoon of salt in a mixing bowl. Dissolve the yeast in 250 ml of lukewarm water. Add the yeast mixture and 3 tablespoons of oil to the flour and knead into a smooth dough using the dough hook of the hand mixer. Cover and let rise in a warm place for about 50 minutes.
- In the meantime, pour the tomatoes into a sieve, drain, pour into a mixing bowl, and mash with a fork. Wash the thyme, pat dry, pluck the leaves from the stems, and chop finely. Season the tomatoes with salt, pepper, and a pinch of sugar. Stir in thyme until 1 tablespoon for sprinkling. Rinse the corn briefly and let it drain. Quarter, core, wash, and cut the paprika into pieces. Peel the onion and cut it into fine rings. Crumble the sheep’s cheese. Knead the yeast dough vigorously on a floured work surface, halve, and roll out into two pizzas (approx. 26 cm Ø). Place on two baking sheets lined with parchment paper. Spread the crushed tomatoes on top, leaving approx. 1 cm wide border.
- Top with paprika, onion rings, corn, sheep cheese, and olives. Dust with cayenne pepper and drizzle with 2 tablespoons of oil. Bake in the preheated oven (electric stove: 225 ° C / convection: 200 ° C / gas: level 4) one after the other on the lower level for 20-25 minutes.
